This take on the mojito has been a staple on our menu since day one at Nipperkin. It’s delicate, light and refreshing, and simplicity itself to reproduce at home.

30ml gin – we use Hendrick’s
15ml mint syrup – we make our own, but buy it in, if need be; Monin makes a good one
Ginger ale, to top and to taste
1 cucumber slice, to garnish
Pour the gin and syrup into a highball glass filled with ice, stir, top up with ginger ale to taste and finish with a slice of cucumber.
